Does not double paperwork. Send in your and your spouses Boarding-Passes in one letter. Quite easy. Or better provide her M&M number with the booking.
Most of the flights are credited automatically.

If you do not live in an arabic country, you can only earn miles on you own personal account. Just take it or if collecting miles is too much work for you to deal with, just leave it.

If you thing "I payed for the flights - the miles belong to me" then you think like some big companies. This is possible. Just book an award flight form your spouses account miles.

In case of a divorce it may be something different...
