I politely disagree with that - what I was referring to is that if you have hold luggage you will need to take it out and then check-in at AMS - probably you will be too late to do that. If you are able to already check-in at CDG (which technically is possible but I'm not sure if they will do it) and label your luggage to the end-destination that is less of a problem. However if you are late and miss your connection it is up to the airline's goodwill to re-book you - as you missed the flight they don't have to do anything (unless it is a changeable ticket obviously).

BTW: the walking times in Schiphol are for very slow-walking persons Normally it takes me half of the time or less.
