Regardless of the cabin class, I have been lucky enough never to encounter rude and surly flight attendants. On the contrary, they have always been pleasant, sometimes exquisitely so.

As for connecting in hubs, CDG is no better nor worse in my personal experience than the other two major European hubs, FRA or LHR. As usual, YMMV.
One can only compare airlines that fly the same routes, for example on FRA-NRT LH offers an upgraded service, because of the ANA and JAL competition, so LH on NRT routes cannot be compared with LH across the pond.

As pointed out numerous times before, AMS is far ahead of the competition when it comes down to the best hub in Europe.

LHR, CDG and FRA are not even close. However the condition of the new T 2 terminals is going downhill fast, not to mention the 2 F salon.

Again, as pointed out the personel was a desaster including the purser and several lounge attendants...
