I think the poster was referring to transatlantic flights. Except for CX, the airlines you quote do not fly these routes. AF Economy is definitely among the best, IMHO, for transatlantic flights, better than any American carrier and than most European carriers.

Regardless of the cabin class, I have been lucky enough never to encounter rude and surly flight attendants. On the contrary, they have always been pleasant, sometimes exquisitely so.

The revamp of the business class cabin, either complete with the NEV/NTC cabins, or partial with the Evolution cabin again makes AF a good choice for me on transatlantic flights.

As for connecting in hubs, CDG is no better nor worse in my personal experience than the other two major European hubs, FRA or LHR. As usual, YMMV.
