On the Emirates site under the Stopovers deal they name 4 hotels with 24-hour check-in/check-out. They are the Marco Polo, Metropolitan, Highland, Regal Plaza. First two are 4*, latter two 3*. None of the 5* hotels have it so I guess your choices are limited to those who will strike a deal for you.

It really is annoying that hotels in places like DXB, where huge numbers of flights leave in the wee hours, don't gear up for this. (Except the Airport hotel where you buy 6-hour periods.)
