This shouldn't be a problem provided everything runs on time.

I would suggest flagging down a cart, you'll be safer that way -- in IAH they seem to be everywhere running people down.

As for the bags, I wouldn't worry. We toured the bag room back in April, and it was an impressive, highly automated setup. In my experience, a bag can make it just as fast, or faster, than you can.
