There is no "EUA chance on redeyes" in general, and on the SEA-EWR route in specific.
Doing this route quite frequently lately, I can say that on several days this flight can be wide open, and in some it can be full.

I personally prefer the 4 PM flight that arrives in EWR at midnight. I found the upgrade cahnces on this one better, as well as getting a full dinner compared to the snack served on the red-eye.

The best chance for an upgrade on the route is on the 10 AM flight, but it may vary according to the traffic in a specific day.

I've had the identical experiences here --I've seen the SEA-EWR F cabins full many times on the red-eye, even though online sources have implied there was plenty of F availability prior to departure. And on other dates, I've seen it completely empty.

I too recommend the late, non-red eye flight referenced above. Better EUA chances (in my experience) and better in-flight service should you get stuck in Y.
