Certainly, some pursers like using the middle galley during the main meal service (see below for reasoning) but that's pretty much the only time there should really be any noise in there.
During my (limited!) experience of the 3 class 777s (LHR-DEN return once a year for the past few years - I did say limited...

). They were heavily using the middle galley (both for meal/snack services and hanging around midflight). Also some club passengers would hang around there to stretch their legs and wait for the loos etc... Not really a problem, but somethign to be aware of when choosing seats.
As you have said, though, the service has tended to be more tray (than trolley) driven (again in my, limited, experience

) - a lot more personal.

We have had some REALLY fab crew on our Denver flights. A couple of years back we had this REALLY great pursor/Cabin Supervisor whatever: the sweetest, nicest little grey haired chap (quite "John Innman" in mannerisms...) - he took real pride in his work and felt like a really well looked after passenger in club. He was also chatty and humourous.
Ah, yet another reason not to fly behind Row 11...
