The middle galley to which you are referring isn't actually meant to be used for the service, so should really be quite quiet.

Certainly, some pursers like using the middle galley during the main meal service (see below for reasoning) but that's pretty much the only time there should really be any noise in there.

The Club service on the three class does seem far nicer, I have to agree. Start with the fact that there are only 40 people in the cabin instead of the usual 48. Also, the mid-galley in between the two cabins means that often, the crew will do a lot of the service by hand from there, which is more intimate and personal. This isn't practical on the four-class as it's a lengthy walk from 15 ABDEFGJK back to the galley to pick things up.

You'll also find that generally, it's the more senior crew who work in Club on the three-class as what you guys don't tend to see is the absolute carnage behind those curtains at row 11.
