IIRC from my discussions with AC Res here in SYD, the shift between shoulder and off-peak season is on or about 9 Dec. As long as you depart prior to the change date you should be okay. But I agree with tcook, very unlikely it'll get much cheaper closer to xmas. If you can wait until early Northern springtime, you might find another seat sale similar to the one AC ran last year when there was the twice daily YVR-SYD service.
Otherwise, go with Tour East.
