I've done something like 10 transcons SJC-IAD so far this year that are under 5 hours and there has always been a fresh food choice. Cheese assortment and fruit on the 7:05 AM flight. I"ve been lucky that my upgrades have cleared on 8 of these, but the annoucement has always indicated the availability of the fresh food choice.

I don't even know how to respond to this. Perhaps it has to do with stops or something. I can only report my experience and what I found published on the UAL website.
