Using London as a comparable, I would have opted for Zuma, Hakkasan or Providores.
Can't remember the name but the floating Chinese restaurant near Centraal Station is quite nice, not too formal but very good food. It is on a boat like an old chinese junk and IIRC has about 3 floors and the higher the floor you sit, the more formal and upmarket it becomes.
If you get a table in the window the view across the harbour to Amserdam is quite nice. Only criticism I had was it is quite a big restaurant - haven't eaten there for about 2 years now.
