www.hostelworld.com is a great site.

I've stayed at great hostels in Costa Rica, Japan, New Zealand, Scotland, Holland, and Ireland. Hostelworld gives reviews and pictures so you know what you're getting into.

My favorites:

J-Hopper in Kyoto, Japan
La Vista Serena in Manuel Antonio, Costa Rica
