Someone else mentioned the 1000 room hotel opening in 2008. This is going to be a Sheraton, and will be adjacent to the huge phx convention center, so it is primarily a convention hotel, and should have 1200-1400 rooms.
This will definitely fit the bill for a mid price business travelers hotel in the heart of central phoenix, and just minutes from the airport.

There is also a W scheduled to open across from Scottsdale Fashion Square in 2006/7. It will be 200-250 rooms and also likely have residences on the top few floors.
