But with the OW pricing, won't it always price it just that way, as two one way fares added together?

My beef with Multi-city option is it doesn't show the set of flights with the cheapest fares as it does with the one way. So if you look YEG-YWG-YYZ-YUL-YHZ-YYC-YEG for some corp. client who want the best value on each leg, you have to look up each segment as a one way to find out exactly which flights are the cheapest as the Multi-city doesn't do that, yet.
