On my transpacs (and transatalants), all in Business Class, the FAs do ask you to lower the shades if you are not looking out, but they don't come around with rulers and rap your knuckles if you don't.

Cabin service was universally excellent, with constant circulation for refills of water (I drink like a fish on planes) and while I am not a heavy drinker, I've never been denied a drink and some of my seatmates keep their glass...refreshed...almost the entire flight (but they seem to be able to hold their liqour very well).

The FAs usually ask if I need anything when I get up, but after a bit they get used to me just roaming to stretch my legs. Most are very personable and quite willing to chat during downtimes, but will politely disengage themselves after about 15 mins to do another service run through the cabin to top off glasses and make sure things are well, then come back.

Of course, I have a special gift that brings out the best in UA crews, so all of my flights are wonderful. Your own experiences may vary.
