Many years ago, I worked at a restaurant (here in the US) that maintained dinner hours 5p-1a Fri & Sat and 11p every other night.

Now? The kitchen closes at 10p on Fri & Sat and 9p every other night.

Plenty of restaurants in the USA (in my experience) are keeping shorter hours than they were 20-30 years ago.

Good news is that NYC still features late dining.
