I have not yet flown Jet or Air Sahara on an international flight, so I can just comment about their "domestic" India service/product.
Jet is better in the air and on the ground than Air Sahara.
Physical product is close enough that I have never really paid attention to it. Jet has a newer feel however.
Air Sahara's "contact centers" -- over the phone or even city ticketing offices -- are not as customer friendly/quick as Jet Airways; however, both have room for improvement at CTOs.
Jet has better food than Air Sahara and the in-air flight crew service is better at Jet than at Sahara. (That said, Air Sahara in flight is not bad by US or European standards.)
Air Sahara is also often marginally cheaper than Jet Airways and has more promotional schemes price-wise.
