What do you guys recommend seeing while there?
If you're going to Belize City I can recommend a few things:
1) Go cave tubing. You hike through the jungle and ride inner-tubes through a cave/river system. You also get a nice bus ride to the cave through the city and into the jungle with a very knowledgable and english speaking guide. Oh, and it includes an authentic Belizian lunch (chicken, rice, beans, etc). The food wasn't that good, but the cave tubing and the "guided bus tour" were great!
2) Go snorkeling or scuba diving (if certified) on the barrier reef. I think it's the 2nd largest barrier reef (2nd to the Great Barrier Reef).
3) Eat lobster! Belize is one of the largest exporters of lobster in the world (at least according to the bus tour guide).
4) Take a jungle tour and go to the Puma reserve. I can't speak for either as I haven't done them, but they sound like good ideas!
Also be wary of hurricanes. I think you'll be there during the tail end of the hurricane season.
