It's to do with making sure your eyes are accustomed to the dark in case of an emergency as has been posted.

It's also why you can't use portable electronic equipment during take off and landing - not because it interferes with the aircraft systems - because if you are listening to a walkman loud you might not hear the emergency announcements.
