This is an interesting topic.
Before 9/11, while CO still had the direct LAX -SAT (San Antonio) dinner flight, I found the food in this relatively short flight quite decent, much better than LAX- IAH, which is longer flight but originate from the same city. Even the flight crews on LAX- SAT were more attentive than LAX- IAH.
Same kitchen, differnt food.
