Plitvice is very beautiful, and, along with Hvar, was the highlight of Croatia for me. It's quite unlike anyplace I've seen before. You only need a day to explore the park well, but I would highly recommend it given your likes and dislikes. From there, it's an easy drive to Trogir (near Split, but more attractive IMHO) and then to Dubrovnik.
