Based on the "things you like" I'd consider Sarajevo. I visited there almost a year ago and found it to be a lovely and fascinating city. There are still obvious scars of the war and there isn't a well-established tourist infrastructure, but the architecture, physical setting, and mix of cultures made it a really enjoyable long weekend. You certainly won't find anyplace else quite like it ...
Two downsides - first, it can be difficult to get to (no railroad and not a huge number of airlines / flights, although connections from Central and Eastern Europe are decent, with flights from PRG, MUC, VIE, BUD, LJU, BEG, and ZAG) and airfares are frequently quite high.
Secondly, I've been told that the hotel situation is pretty bad - shabby places at high prices. (I was staying with a friend so I can't verify this.) The other costs, however, are extremely reasonable.
