I enjoyed the Buckhorn Exchange when I was in Denver. They have a lot of your more exotic cuts from Venison to Buffalo to Elk.

The Broker was pricey but very nice as well. Hope you aren't allergic to shellfish. They give you shrimp instead of the usual bread and butter.
