It's not just ensuring that your passport doesn't have an Israeli stamp in it.

If you want to visit Israel from Egypt you have to FLY and then return THE SAME WAY.

If you want to visit Israel from Jordan you can either fly or cross via the King Hussein Bridge and then return THE SAME WAY.

If you want to go to Jordan from Egypt (or the other way), you either fly or get the ferry to Aqaba from Sharm-el-Sheik or Nuweiba. You can use a different way to return or continue your journey.

Unless something has changed in the last couple of years this is not correct - there was no limitation on your mode of transportation between Israel and either Jordan or Egypt or vice versa. Not sure why this would even be an issue.
