If you are based close to a Ryanair airport, why not consider a trip to Stockholm, Sweden? Stockholm is one of my favourite locations, and it's not as hot as the southern parts of Europe.
But be aware which airport is used by Ryanair, and take a lot of money with you, because Scandinavia is the most expensive place in Europe.
