Good question!

Sometimes the silverware is magnetized and sometimes its not. The reason (according to a flight attendent that told me) is that large magnets are used to go through the "waste" left over from a flight. Not sure exactly where its done, but the magnets pick up any sort of metal (silverware) out of the garbage.

So, the silverware becomes slightly magnetized itself.
