I think you better check out Delia Smith online. <g> Seriously, she's helped me adapt to British cooking, and although a cook for many years in the States, her recipes are easy and very good. Olive oil over potatoes doesn't turn them into the traditional roast potatoes.. use duck fat! Then again, stick to a roast chicken!!
