anyone to reach the seat in front of them, how do you go about politely telling someone (especially of the elderly) to stop pulling your seat, especially when there's no need to?

According to the picture in your link, the elderly lady must "Elasta-girl" length arms to reach the seat in front of her in order to get up.
Now in the real world of coach where it may be more difficult for an elderly person to get up, what else is she going to do? The only thing I ask is that my head not be grabbed in the process. If the person behind me needs to get up, I just ask he/she let me know so I can sit up a bit.
