Make a dummy reservation for the flights you want. You'll have to enter a credit card number to view the seat map, but as long as you click "Cancel" you won't be charged. Entering a fake credit card number will also work for a simple seat map view.

The seat map isn't always a great predictor of how full a cabin is (some people may be ticketed but have unassigned seats) but it's better than nothing.
