it seems JK does the same like most other European carriers.
comparing LH, I can only say they do manage full service w/ snack (two-course) in C even if the flight time is predicted 30 mins and they do keep the C middle seat empty no matter what happens, even if the gate if full with pax from a cancelled flight etc.

hope you still had a good holiday in spite of your ride in Y.
