You do not need a ticket or itinerary to get an Indian visa. Just money, as far as I can tell!
I ate the lunch buffet at the Taj Mahal hotel restaurant a couple of weeks ago. It was terrific and cost only about $10 (a huge sum in India).
When I was in Nepal, I stayed one night at Nagarkot, a tiny village in the mountains about 30 km. northeast of Kathmandu. Very quiet, but beautiful. With luck, you can see the sun rise over the Himalayas.
