You definitely have time to get all the way up to the open water dives, and you can do those in Fiji if needed. The initial part of the PADI course can be done in a weekend and you can probably find someplace to do your open water before your trip. I did my open water in Jasper, Alberta in mid September when the air temp was zero or 32 F and the water was 10 or 50F. No excuses now eh!
