I'm sure they use beginning and ending inventories, and rely on a variance based on # of FC passengers.

Probably similar to what most bars use.

As for in-flight CC, I vaguely recall hearing about Virgin Atlantic's plans to put in credit-card driven slot machines. No idea if it was actually done - I'm sure someone here can correct me if I'm wrong!
