A mainline A320 has 138 seats (12 F and 126 Y), so they are staffed with three FAs (one in F and two in Economy).

As to why UA went with 156 seats (B6 pulled some of their seats to get to 150 and three FAs and Song fits 199 on their 757s so they only need four), I imagine they felt they could fill it and the extra service (having two FAs for each half of the cabin helps move that service along) would be worth it.
