1 hour is OK, I've made plenty non-Schengen-to-Schengen connections in half an hour, but you do have to walk rather quickly and hope the passport control doesn't have too long a queue. Plus, the flights to CDG are hourly (alternately AF and KL) so if you miss one, you shouldn't have a problem.
It's a very well laid out airport, so you won't have the same chance of getting lost as you do at LHR.
I think the afternoon flight is a 737-300, so you'll probably end up on an airbridge on D-pier. Follow the signs up to the main section, then head left through passport control towards C-pier. Walk through the new Lounge 1 area and down C-pier (it could be B if it's operated by AF, I can't remember if they moved them or not), and you're there.
