OK, so I feel so dumb having to ask about this.

We really enjoy a wine merchant in a Paris market (in the 7th) that we keep returning to each time we are in Paris.

Our language "overlap' is limited but we all enjoy the event and always buy some enjoyable wines.

But the merchant always offers us raw oysters during the sampling.

Why?
