An 8:10am flight might have Buy on Board, but a 9:45pm flight would not.

So either the food was loaded for the 8:10am flight, at which point it would be spoiled by 9:45pm, or they did not cater until after 9pm, at which point Gate Gourmet probably did not have the items available to load on the flight since it was well past the time they would normally have catered food available to load.
