I think Canadian has replaced all its Boeing 744s with the new seat and laptop plug. My mother and my sister were on one of its C class in July and their seats have all the good things...

I think you should confirm the info with Canadian's website and the cocierge. CP only have four Boeing 747s and I don't see how the refurbishment will take that long.

About CP's YYZ-NRT route, I think AC has wanted the NRT route for a while... AC gets the rights to fly YYZ-HKG a while ago... but I think AC will finally start that route now. Expanding into the Asian sky through the East Coast... also KIX-YYZ seasonal summer route is doing alright.

About HKG-YVR route, CP will definitely held on to it until the every last possible chance. CX will have a major headache if AC is flying into HKG, because there are some major competitions going. CX's flight to YYZ is not that profitable because of the seasonal nature of that route, but with AC's joining the market, there will be some interesting thing happen there.

Anyway, have a good trip to HKG!
