I have always stayed at the Hotel Arosa, which just feet off the Grand Via and very conventient walking distance to Chueca (no need for metro or taxi). It is a Best Western property and you can usually get good rates off their website. As for bars/clubs, I think you will like LL Bar on Pelayo or Black and White.
