Where I have seen it, it's been in instances like XXX-SFO-MSP, and then I'll get to SFO and the option to SDC to SFO-DEN-MSP or SFO-ORD-MSP comes up. Sometimes in DEN, I've seen the option to SDC from DEN-MSP to DEN-ORD-MSP.

PQP are supposed to remain unchanged. YMMV as to whether or not that actually happens after a re-route that changes the number of hops. Sometimes it may work out in your favor; other times you may have to write in; and still other times the credit will be re-apportioned properly.
Important to note that a longer routing acquired this way will also earn you the lifetime BIS miles from what you actually flew, so if you are seeking your MM or higher lifetime consider it.
