We both had the chicken enchiladas yesterday (MSY/PDX) and they were not very good at all...there was NO green sauce, almost no cheese, and while an enchilada is usually a soft tortilla, ours were so dry/stale/crisp but not in a good way to be almost inedible. The FA said she took a picture to send to whoever to complain. I ended up dumping my hummus on top of them to give them some moisture. The chicken itself was cooked well but in a big slab, not diced like you would expect to find.
