I feel the same way, being based in Singapore, about a lot of the Singaporean hawker food dishes, which you can get for $5-10 SGD almost anywhere on the island (so the equivalent to ordering at a diner). With the hawker food on SQ it's a simple test - whether you'd queue for 30 mins to have what you've just eaten or not. I'm guessing not too many people would queue for 30 mins for some waffles.
But ultimately good range of choices, and sometimes comfort food (which varies depending on where you're from) is a godsend on a long flight.
+1 about the hawker dishes, I just go to my favorite hawkers rather.
On the other topic, I have had the Buttermilk Waffle with Strawberry Coulis before and boy was it dry, one really needed the coulis and there wasn't enough to "remoisturize" the waffles. YMMV
