Visitors who do successfully get through an ambitious itinerary in the summer are those who are HIGHLY motivated. These are visitors who already know what it is they want to see and do. Questions from this kind of visitor are about exploring options and enquiring about pitfalls, specific queries related to their plans/interests.
Unless what you want to do/see is a summer season thing, I would second this and personally avoid going during the summer months. Though lately even late spring/early fall has been encroaching into what we would have called mid-summer heat/humidity with 30-35C temps and 70-80% humidity.
A Vegetarian diet might be challenging as well since traditional Japanese cooking uses dashi and can be made from bonito, anchovies, or sardines, even though the dish itself could be mainly noodles or vegetables. There are dishes that can be made with alternatives like vegetable, kelp or shiitake but it won't be just a matter of substitution and places may not be accommodating. Would look into finding dedicated vegetarian/vegan places, or Buddhist shojin ryori places if you want something traditional.
