Planning Japan trip, either this summer or next summer. But, wanted to start planning right now to ensure that we can cover the beautiful country.

1. We will be traveling with my son (adult)
2. We are vegeterian
3. Want to cover all the major cities and tourist attractions.

I am also interested to add one leg for Shanghai and Beijing but that might be too much, so would like to hear about that as well.

I have done basic research but wanted to get broad idea and not influence my research in getting recommendations.
