I have a family of 4, not 5, so we can often squeeze into a queen bed/sofa bed type setup in Europe, especially for short stays. Family suites are even better but they can be cost-prohibitive, they are often markedly more expensive than just getting two regular rooms.
Last year we tried a two-room setup for the first time at a hotel in Tokyo, our rooms were just down the hall from each other. I liked it, it was particularly nice to have two bathrooms. My wife did not care for it though, she did not like being apart at night (we each stayed with a kid as they are too young to be on their own in a room).
We have done Airbnbs in the past but I have to admit I am not that fond of them for a variety of reasons. Basically plan A for us is to look for a reasonably priced family suite, and failing that, go for 2 rooms.Only if those plans didn't work would I resort to Airbnb.
