The wine is significantly more important to the passenger experience in my opinion. Airplane food is always airplane food (even on the likes of ANA first, etc.). On US-Euro redeyes they shouldn't even serve dinner and just bring back the wine flights.
Setting aside the scenario of the “short” east bound TATL flights, I would say that the % of passengers wanting to eat something on board is higher than those passengers that only care about the quality of the wine.
But your argument makes sense if you think ANA First food is equivalent to Polaris offerings.
