You are entering Schengen at AMS.
It is physically, logistically, and logically impossible for you to undergo EES at DUS when instead you entered Schengen at AMS; moreover, you will be arriving in DUS on a flight from the Schengen zone and there simply are no such checks or controls (systematically) enforced on intra-Schengen flights.
(That would be like saying - if you were on a JFK-LHR-MAN BA ticket - that you would only have your passport checked by BorderForce at MAN and that you would somehow have no check or control at Heathrow, where you actually enter the UK)
All necessary Schengen checks will be performed where you enter Schengen - which, in your case, is Schiphol, not Düsseldorf.
