Everyone in Colorado looking for snow in Utah; Everyone in Utah looking for snow in Colorado.

Both will be highly disappointed.

However, they don't need to gray all the seats out. They could just do like they do when you are initially searching, where they block E+ (like when I'm booking my daughter who has no status) but give you the option via a pop-up to buy E+, while still allowing you to see all of the open seats on the plane.
Except the pop-up would be the opposite - "you have selected an economy seat but have paid for First class" (and you can select an F seat when booked in economy, and it gives you the upgrade price)
