I don't have an "overnight" rule - as far as I'm concerned, I've been to a country if I've set foot in it. (Although I exclude airside transits, so I just have a different rule, I guess.) Sometimes there's simply no reason to stay overnight, or staying in a neighbouring country is more convenient or appealing. And we only spent half an hour in Paraguay before deciding we didn't much care for it and turning back to the border.
A bigger question is that of what actually counts as a country or territory. Jersey, Guernsey, Isle of Man? I think so. Greenland? Possibly. Svalbard? The app I use to keep track of my travels says so, but I'm not so sure. And what about countries that no longer exist? I don't count them, but perhaps I should. It's just a bit of fun, and I don't take it too seriously.
As for taking the helicopter to Monaco... I have no interest in flying machines, and can't really think of a less desirable way to enter the principality. I caught the train.
